Banana Upside-Down Cake Matcha

Matcha, but not your local cafe's everyday cream-top. This one’s in a class of its own—caramelized bananas that crunch in between your teeth, creamy banana-infused cold foam, a hit of salted caramel, and rich, earthy matcha to bring it all together. Sweet, salty, and just sticky enough to be basically a desert. You in?

Ingredients:

Banana Cold Foam:

  • Canned banana water (can be subbed for banana milk, i like this recipe

  • 2 oz heavy cream

  • Pinch of salt

  • 1-2 drops yellow food dye

Flambéed Bananas:

  • 1 ripe banana, chopped into slices

  • 2 tbsp sugar

Matcha Latte:

  • 3-5.5 grams ceremonial matcha powder (adjust based on desired strength)

  • 1-2 tbsp caramel sauce

  • 6-8 oz milk of choice

  • Ice

Garnish:

  • Extra caramel drizzle

  • Flambéed banana slices

Instructions:

Step 1: Reduce the Banana Water

Take 1/4 cup of canned banana water and boil it for 15 minutes to reduce it slightly. Once reduced, set it aside to cool completely.

Step 2: Flambé the Bananas

While the banana water is cooling, prepare the flambéed bananas:

  1. Chop the banana into slices and coat them evenly in sugar.

  2. In a pan over medium heat, cook the bananas until the sugar begins to caramelize.

  3. (Optional) Can also use a torch to crisp them up if you have

  4. Set aside the golden, crispy bananas for garnish.

Step 3: Make the Banana Cold Foam

  1. Take the cooled banana water reduction and combine it with heavy cream, a pinch of salt, and 1-2 drops of yellow food dye.

  2. Froth the mixture until light and airy.

Step 4: Prepare the Matcha Latte

  1. Sift 3-5.5 grams of matcha powder into a bowl.

  2. Add a small amount of hot water (about 2 oz) and whisk vigorously until fully dissolved and frothy.

  3. Stir in 15 grams or 2 tbsp of caramel sauce.

  4. Fill a glass with ice and pour in your milk of choice.

  5. Add the prepared matcha shot and stir.

Step 5: Assemble the Drink

  1. Top the matcha latte with your banana cold foam.

  2. Drizzle with extra caramel sauce.

  3. Finish by garnishing with a few flambéed banana slices.
